The Dairy

Located in the heart of Logudoro, a vast territory in Central and Northern Sardinia with a traditional agro-pastoral vocation, Caseificio 3L dairy has been working for more than two decades in the industry related to the production of cheese and ricotta specialities typical of its region.

Its cheeses are the result of handcrafted processing of milk from farms where sheep are fed on natural pastures and selected hays.

The products are subject to continuous and rigorous checks to ensure quality and genuineness, attributes that have always characterized the production of dairy 3L For this reason the company is certified ISO 22000.

Production is carried out by combining in the right proportion the traditional system used by shepherds with the latest technologies.
Examples of this are specialities such as ricotta Mustia and Fresa, together with Pecorino Fior di Saccargia, distinguishing products of Sardinia’s dairy production.
The range of products offered by Caseificio 3L dairy is very specialized and divided into four main categories, namely: Pecorino Cheeses, Caciotta Cheeses , Ricotta Cheeses and Cream Cheeses.

Pecorino Cheeses, a typical production of the region, and Caciotta Cheeses can be used both as table cheeses and to season traditional and non traditional dishes:

  • Pecorino Dolce di Collina, a cheese type with a sweet and aromatic taste;
  • Pecorino Fior di Saccargia, a ripe cheese with a spicy taste;
  • Pecorino Balente a cheese with an aromatic and slightly spicy taste;
  • Pecorino Tiu Bore, a cheese with a slightly spicy taste;
  • Fresh Pecorino Cacio, a soft cheese with a delicate taste;
  • Spicy Fresh Pecorino Cacio, in which the sweetness of fresh soft cheese is enhanced by the presence of spices like hot pepper, basil and parsley, mushrooms;
  • Pecorino Caciotta Margherita, a raw soft cheese, delicate but with a slight spicy taste;
  • Pecorino Nonno Arturo, a soft cheese, delicate and sweet;
  • PPecorino Bella Fetta, a sweet cheese suitable to be sliced.

Ricotta cheeses can be divided into the following three types:
Fresa, Mustia and Gentile (Mild).

  • Ricotta Fresa, whose processing is based mainly on pressing, which gives it a flat shape and compact paste texture; smoking and salting give it an additional distinctive taste;
  • Ricotta Mustia is smoked and salted just like Ricotta Fresa, although it differs from the latter for its soft and friable texture, also available in an alternative variety spiced with hot pepper;
  • Ricotta Gentile (Mild) is the classic, plain ricotta cheese (similar to cottage cheese). White, soft, delicate, excellent for preparing many different dishes and desserts.

These products have received and still receive increasingly great appreciation not only from the local and national markets, but also from the EU and international markets, thanks to the company’s constant contact with operators in the industry, i.e. large-scale retailing and distribution chains.
Caseificio 3L dairy addresses the global market and nevertheless Sardinia covers a large percentage thereof due to the fundamental role of regional distributors and mass retailing, but also to the greater knowledge of the product and increasing end customer retention.
A third of production is now constantly exported to the foreign markets through consolidated distribution relationships especially within the European Union.
